9/20 - Old World Cheese & Wine
I'm really looking forward to this class because I get to work again with my dear friend Erin Hedley (aka La Dame du Fromage) Erin is a local cheese expert who spent much time as both a student and a teacher at Artisanal - the famous cheese merchant in New York. We'll taste 7 wines with 7 cheeses and talk about the details of how to pair wine with cheese.
10/18 - Super-Tuscany
Always well attended both because of the amazing wines but also the familiarity of the region and it's expertise in Agro-tourismo. Learn the difference in DOC vs DOCG wines and regulations, learn why the phrase "Classico" is important and discuss the explosion of the "Super-Tuscan" phenomenon.
11/8 - Bordeaux Elegance
Having spent much of my career buying, selling and working with a Bordelaise Negociant, these wines have a special place in my heart. They have the intense power that satisfy the American palate....but set themselves apart with their alluring restraint and elegance. We'll talk about the difference between the Rive-Gauche and Rive-Droit. We'll also discuss wine age-worthiness always a lively conversation.
12/13 - Champagne Splendor
A NCWM tradition of being the last class of the year. We'll talk about the complicated Methode Champenoise and discuss the unique-ness of the Champagne style. We'll learn about why some Champagne is dry and some is sweet. We'll learn why only Champagne can be called Champagne. Most of all - we'll celebrate the season and all of our blessings.
